Bebop’s Base Rub Chicken Wraps


1KG Chicken Thighs
Good Rub Base Rub
1 Bell Pepper - Red/Yellow
Small Iceberg Lettuce
100g Baby plum Tomato’s
1/2 Red Onion
1 lime
1 tbsp table salt


Start the BBQ coals, as they are getting up to temp lay out the chicken thighs on a tray and cover generously with Good Rub Base rub.
When the BBQ is up to 200c place the chicken on the BBQ on indirect heat
Once the chicken has reached an internal temperature of 74c remove from the BBQ remove the skin off the thighs and shred the chicken.

If you want crispy chicken then put the shredded Chicken on a tray and back on the BBQ until crispy.

Prepare the salad:

Chop the peppers into thin strips
Shred the lettuce

Pickle Salad:

Finely slice the onion
Make cucumber ribbons - use a potato peeler lengthways
Place the onion and cucumber in a bowl and cover with 1 Tbsp salt and half the juice on 1 lime, mix it up and leave it for 5 minutes. Then squeeze out the excess fluid.

Now for the best part, build your wrap and eat.
